Spicy garlic chili ramen

Directions

  1. 1Bring a pot of water to a boil and cook the ramen noodles according to package instructions.
  2. 2Before draining, reserve about 1/3 cup of the cooking water.
  3. 3Drain noodles and set aside.
  4. 4Heat 2 tablespoons of oil in a pan over medium heat.
  5. 5Add the chopped garlic, green onions, cilantro, and chilies.
  6. 6Sauté them for about 30 to 60 seconds until they become fragrant.
  7. 7Lower the heat and add soy sauce, oyster sauce, chicken bouillon powder, and reserved noodle water.
  8. 8Add the drained noodles to the pan.
  9. 9Toss everything together until the noodles are evenly coated and glossy.
  10. 10Turn off the heat.
  11. 11Stir in lime juice, more green onions, and cilantro.
  12. 12Taste and adjust by adding more lime juice if needed, or a splash of water if it’s too salty.

  • 2 packs ramen
  • 3 cloves garlic, finely chopped
  • 1 red birds eye chilies, chopped
  • 1 stacks green onions, chopped
  • 1 hand full cilantro leaves, chopped
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp chicken bouillon powder
  • 2 tbsp oil
  • 1 tbsp lime juice

Tips

  • Be careful not to let the garlic burn when sautéing.
  • Adjust chicken bouillon powder and lime juice to taste.
  • Add a splash of water if the ramen is too salty.
