Italian Meatloaf

Directions

  1. 1Start by adding 2 pounds of ground beef pork blend to a large mixing bowl.
  2. 2Add 2/3 cups of panko breadcrumbs and a half a cup of whole milk, then set aside to soak.
  3. 3Add two whole eggs, a half a cup of Parmesan cheese, a quarter cup of chopped Italian parsley, a tablespoon of dried oregano, two teaspoons of salt, a teaspoon of black pepper, a half of a diced onion, and two to three minced garlic cloves (sautéed first).
  4. 4Bring the soaked panko breadcrumbs back in.
  5. 5Using hand mixers, mix all ingredients together until you have a big ball of meat.
  6. 6Throw the meat mixture onto a baking sheet and form it into a loaf (or two smaller loaves).
  7. 7Place slices of old bread under the meatloaf to absorb grease.
  8. 8Bake in the oven at 350 degrees Fahrenheit for about 30 minutes.
  9. 9After the first 30 minutes, take them out and cover them with your favorite marinara sauce.
  10. 10Return to the oven for about 20 minutes or until almost done.
  11. 11When it comes out this time, cover them with shredded mozzarella cheese.
  12. 12Throw them back in the oven until the cheese is melted and the meatloaf is fully cooked.
  13. 13Serve over a bed of spaghetti marinara and sprinkle with a little bit of Parmesan.
  14. 14If you have fresh chopped basil, add a little bit of that too.
