Trim the outside of the pineapple and season it with your favorite BBQ dry rub.

Place jalapeños, bacon, and cream cheese on separate trays and season each with more dry rub.

Toss everything into the smoker at 325°F (160°C) for about 1 hour.

Brush the pineapple with sweet Thai chili sauce and baste it all over.

Smoke for another 20-30 minutes until caramelized and tender.

Chop up the pineapple, jalapeños, and bacon.

Mix it all into the softened cream cheese until fully combined.

Garnish with scallions, a drizzle of sriracha, and a few pineapple chunks on top.
