Pineapple Popper Dip

Directions

  1. 1Trim the outside of the pineapple and season it with your favorite BBQ dry rub.
  2. 2Place jalapeños, bacon, and cream cheese on separate trays and season each with more dry rub.
  3. 3Toss everything into the smoker at 325°F (160°C) for about 1 hour.
  4. 4Brush the pineapple with sweet Thai chili sauce and baste it all over.
  5. 5Smoke for another 20-30 minutes until caramelized and tender.
  6. 6Chop up the pineapple, jalapeños, and bacon.
  7. 7Mix it all into the softened cream cheese until fully combined.
  8. 8Garnish with scallions, a drizzle of sriracha, and a few pineapple chunks on top.
