Pork Tenderloin with Honey Garlic Sauce

Directions

  1. 1Preheat oven to 180C/350F.
  2. 2Mix Sauce ingredients together.
  3. 3Mix Rub ingredients then sprinkle over the pork.
  4. 4Heat oil in a large oven proof skillet over high heat.
  5. 5Add pork and sear until golden all over.
  6. 6When pork is almost seared, push to the side, add garlic and cook until golden.
  7. 7Pour sauce in.
  8. 8Turn pork once, then immediately transfer to the oven.
  9. 9Roast 15 - 18 minutes or until the internal temperature is 68C / 155F.
  10. 10Remove pork onto plate, cover loosely with foil and rest 5 minutes.
  11. 11Place skillet with sauce on stove over medium high heat.
  12. 12Simmer rapidly for 3 minutes until liquid reduces down to thin syrup.
  13. 13Remove from stove, put pork in and turn to coat in sauce.
  14. 14Cut pork into thick slices and serve with sauce!

Ingredients

  • 2 pork tenderloin (pork fillet), 500g/1lb each (Note 1)
  • 1.5 tbsp olive oil (or butter)
  • 3 garlic cloves, very finely chopped
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 3 tbsp cider vinegar (Note 2)
  • 1.5 tbsp soy sauce, light or all purpose (Note 2)
  • 0.5 cup honey (or maple syrup)

Tips

  • Trim the silver skin off the pork tenderloin for best results.
  • For no pink, roast until internal temperature is 68C / 155F, then rest for 5 minutes.
  • For a slight blush of pink, roast until internal temperature is 65C / 150F, then rest for 5 minutes.
  • If you don't have an ovenproof skillet, transfer pork to a baking tray to bake and collect juices to add to the sauce.
