Prepare the wonton filling by combining ground pork, shrimp, one egg, salt, sugar, and white pepper in a mixing bowl. Mix using a stand mixer.

Prepare wontons using wonton wrappers and filling. Add a small amount of egg wash to the wrapper to seal.

Boil wontons in a wok with water for approximately 3 minutes or until they float to the top.

Cook noodles in a wok of boiling water for 15 seconds.

Prepare the soup base by combining chicken stock, light soy sauce, and sugar in a pan and heating until golden.

Assemble the soup by placing cooked noodles and wontons in a bowl, topping with green onion, and ladling soup over ingredients.
