Place one stick of butter in a 10-inch cast iron skillet and melt it in the preheating oven.
Cut 4-5 ripe bananas into bite-sized pieces.
In a bowl, combine the sliced bananas with 1/2 cup of brown sugar, a little bit of cinnamon, a pinch of nutmeg, a drizzle of vanilla bean paste or extract, and 1 to 2 tablespoons of bourbon (optional).
Mix the banana mixture well.
In another bowl, prepare the batter by combining 1 cup of all-purpose flour, 3/4 cup of sugar, 1 1/2 teaspoons of baking powder, and a pinch of salt.
Slowly add 3/4 cup of whole milk to the dry ingredients, mixing until everything is nice and smooth.
Carefully remove the hot skillet with the melted butter from the oven.
Pour the batter directly over the melted butter in the skillet; do not stir it.
Drop spoonfuls of the banana mixture into the batter.
Optionally, top with pecans.
Bake in the oven for about 40 to 45 minutes, or until nice, golden, and bubbly.
Let the cobbler rest for at least 10 minutes before serving.
