Nefi's Kebab (Homemade Doner)

Directions

  1. 1Blitz the onions until they form a paste.
  2. 2Add minced meat, blitzed onions, yogurt, olive oil, paprika, pepper, chili flakes, cumin, oregano, and salt to a mixing bowl.
  3. 3Mix all ingredients together until smooth and well incorporated.
  4. 4Spread the meat mixture super thinly onto square sheets of parchment paper, aiming for only a few millimeters thick.
  5. 5Roll up the parchment paper with the meat mixture tightly.
  6. 6Place the rolled meat onto a baking tray and bake at 200°C for 20 minutes.
  7. 7Halfway through baking, take out the tray and drain any excess liquid.
  8. 8Return the tray to the oven and bake for another 15 minutes, or until the paper turns a dark brown.
  9. 9Remove the cooked doner from the oven and unroll it.
  10. 10Top the doner meat with some lemon juice.
  11. 11Place the doner meat back in the oven for a further 5-10 minutes to make it a little bit crispy.
  12. 12Serve the homemade doner in pita bread with lettuce, tomatoes, onions, and chips.

  • 1 kg Minced meat (beef, lamb or mix)
  • 50 ml Olive oil
  • 4 heaped tbsp Yoghurt
  • 2 tbsp Paprika
  • 2 tbsp Pepper
  • 2 tbsp Chilli flakes
  • 2 tbsp Cumin
  • 1 tbsp Oregano
  • 2 tbsp Salt
  • Lemon juice
  • Pita bread
  • Lettuce
  • Tomatoes
  • Onions (for serving)
  • Chips

Tips

  • Ensure the minced meat mixture is smooth and well incorporated.
  • Roll the meat mixture very thinly on parchment paper (a few mm thick).
