Marry Me Chicken

Directions

  1. 1Place chicken breasts on a plate and season with garlic powder, paprika, and chilli sauce.
  2. 2Add oil to the pan and place the seasoned chicken breasts in it to get some color.
  3. 3Dice half an onion or a shallot.
  4. 4Take sundried tomatoes out of a jar and roughly chop them.
  5. 5Chop spinach (or basil if available).
  6. 6Remove the chicken from the pan once browned.
  7. 7Move the pan to a lower heat.
  8. 8Add diced onion to the pan.
  9. 9Add fresh garlic to the pan.
  10. 10Add red pepper flakes to the pan.
  11. 11Cook the onions, garlic, and red pepper flakes for about 2 minutes.
  12. 12Add sundried tomatoes and a stray piece of onion to the pan.
  13. 13Boil water in a saucepan with a good pinch of salt.
  14. 14Add pasta to the boiling water.
  15. 15Add chicken stock to the pan and scrape the flavor from the bottom.
  16. 16Add cream to the pan.
  17. 17Add thyme and oregano to the pan.
  18. 18Grate plenty of Parmesan cheese into the pan.
  19. 19Add more smoked paprika to the pan.
  20. 20Add spinach (or basil) to the pan.
  21. 21Nestle the cooked chicken breasts back into the sauce.
  22. 22Check the chicken temperature with a thermometer.
  23. 23Add pasta water to the sauce.
  24. 24Squeeze lemon juice into the sauce to freshen it up.
  25. 25Add the cooked pasta to the sauce.
  26. 26Mix the pasta with the sauce to get it lovely and coated.
  27. 27Place the pan back on the heat for 5 minutes.
  28. 28Slice the chicken breast against the grain.
  29. 29Plate up the pasta and chicken.
  30. 30Drizzle more sauce over the plated dish.
  31. 31Sprinkle a few red pepper flakes on top.
  32. 32Grate more Parmesan cheese over the dish.
