Directions

  1. 1Cream the softened butter and confectioners’ sugar together in a mixing bowl until smooth and creamy.
  2. 2Mix in the egg yolk and vanilla bean seeds until fully combined.
  3. 3Gradually add the sifted flour and mix until a smooth dough forms.
  4. 4Divide the dough into two equal portions.
  5. 5Roll each portion into a 12-inch (30 cm) log, approximately 10 oz. (280 g) each.
  6. 6Wrap the dough logs in plastic wrap and refrigerate for at least 2 hours or until firm.
  7. 7Preheat your oven to 350°F (180°C).
  8. 8Sprinkle granulated sugar onto a work surface and roll the chilled dough logs in it until fully coated.
  9. 9Using a sharp knife, slice the logs into ½-inch (1 cm) thick rounds.
  10. 10Arrange the cookie rounds on prepared baking sheets, leaving some space between each.
  11. 11Bake for 12-15 minutes, or until the edges turn lightly golden.
  12. 12Transfer the cookies to a wire rack and let them cool completely.
