Grilled Cheese Breakfast Burritos

Directions

  1. 1Cook diced onion in a pan on medium heat.
  2. 2Add extra lean beef mince.
  3. 3Add seasonings: salt, onion powder, garlic powder, sage, thyme, smoked paprika.
  4. 4Add diced garlic.
  5. 5Add Worcestershire sauce.
  6. 6Let it fully cook through.
  7. 7Add tomato paste, mix it and set aside.
  8. 8Mix eggs, egg whites and salt in a bowl.
  9. 9On low to medium heat, add light butter, then add the eggs and stir and fold them gently until they're nice and fluffy.
  10. 10Grab a warm tortilla, evenly distribute the mince and eggs.
  11. 11Add sriracha mayo and chives.
  12. 12Roll it tightly, and repeat the process for the other burritos.
  13. 13Place some cheese on a pan, then place the burrito on top.
  14. 14Cook it on low for 2-4 min, until they are golden brown and crispy.
  15. 15Wrap them up and store them in the fridge or freezer and reheat when you are ready to eat.

  • 1 Diced Onion
  • 1.5 KG Extra Lean Beef Mince
  • 1 Tsp Salt
  • 1 Tsp Onion Powder

  • 100 ml Worcestershire Sauce
  • 350 g Tomato Paste
  • 14 Eggs
  • 200 g Egg Whites
  • 1 Tsp Salt
  • 25 g Light Butter
  • 1 Warm Tortilla
  • 25 g Sriracha Mayonnaise
  • Chives
  • 25 g Low Fat Cheese

Tips

  • To reheat, microwave the burrito for approximately 2 minutes to thaw, then air fry or oven bake at 190C/375F for approximately 5-8 minutes
  • Alternatively, reheat the burrito in the pan on low heat, turning every minute or so for approximately 5 minutes.
