Directions

  1. 1Preheat the oven to 275° F and line a baking sheet pan with foil.
  2. 2Rinse the rack of ribs, pat dry, and pull the thin membrane off the back of the ribs.
  3. 3Blend the rub seasoning mix in a small bowl.
  4. 4Lay the rack of ribs on the foil-lined baking pan, brush with olive oil, and generously smear the rib rub all over the ribs.
  5. 5Tightly cover the baking sheet with foil and bake. Bake for 2.5 hours for baby back ribs or 3-3.5 hours for St. Louis style ribs until tender.
  6. 6Remove the ribs from the oven, increase the temperature to 350° F, and drain any liquid from the pan.
  7. 7Coat the ribs with BBQ sauce and return to the oven uncovered for 20 minutes.
  8. 8Broil on low for about 2 minutes if you prefer extra caramelization.
  9. 9Rest the ribs for 10 minutes before slicing and serving.

Ingredients

  • 1 slab pork ribs
  • 1 tsp olive oil
  • 1/4 cup paprika
  • 2.5 tbsp chili powder
  • 2 tbsp brown sugar
  • 2 tbsp black pepper, ground
  • 2 tbsp kosher salt
  • 1.5 tbsp garlic powder
  • 1.5 tsp dried oregano
  • 1/2 tsp dry mustard
  • 1/4 tsp cumin
  • 1/4 tsp onion powder
  • 1 pinch cayenne pepper
  • 8 oz BBQ sauce (optional)

Tips

  • Season the ribs the night before and refrigerate; let them come to room temperature before baking.
  • If you prefer less spicy ribs, skip the spice rub and use only salt and ground pepper.
  • The BBQ sauce is optional, but recommended.
  • Cover the pan tightly with foil to lock in steam for moist results.
  • For fall-off-the-bone texture, cook until the internal temperature reaches 190-200° F.
  • If you are watching sodium, decrease or omit the salt in the rub.
