Directions

  1. 1Mix flour and salt in a plate.
  2. 2Cover the cod fillets on both sides with the flour and salt mixture.
  3. 3In a hot pan, add butter and olive oil.
  4. 4Place the floured cod fillets into the hot pan.
  5. 5Cook the cod fillets on both sides until they have a nice color and are mostly cooked through.
  6. 6Remove the cooked fish from the pan.
  7. 7In the same pan, add smashed garlic, capers, artichokes, and green olives.
  8. 8Add white wine to the mixture and let it reduce by half.
  9. 9Add 4 ounces of stock or water to the pan.
  10. 10Return the fish to the pan.
  11. 11Add a little bit of cold butter to thicken the sauce nicely.
  12. 12Add the juice of half a lemon.
  13. 13Finish with some parsley, capers, and red pepper flakes.
  14. 14Serve as is, with pasta, or mashed potatoes.
