Place the gammon into the slow cooker with 500ml of chicken stock and cook on high for 6-8 hours.

Remove the gammon from the slow cooker and shred it.

Add butter to a pan on medium heat.

Add flour to the butter to make a paste.

Gradually add milk and whisk until combined.

Add black pepper.

Add fresh parsley.

Add one tablespoon of wholegrain mustard.

Mix until you reach your desired consistency.

Serve the shredded ham with mashed potato, garden peas, and the parsley sauce.

1 kg gammon
500 ml chicken stock or cider
600 ml milk
50 g butter
35 g plain flour
1 tbsp wholegrain mustard
1 handful fresh parsley, finely chopped
pepper
mashed potato
garden peas

Tips
Steep gammon overnight before cooking to remove salt.
Feel free to add more milk to the sauce if it’s too thick.
