Cinnamon Raisin English Muffins

Directions

  1. 1Combine 3/4 cup warm water, 2 1/4 tsp dry active yeast, and 1 tbsp of brown sugar in a large mixing bowl.
  2. 2Let the mixture stand for about 5 minutes until it becomes foamy.
  3. 3Add 3/4 cup warm milk, 3 tbsp melted butter, 3 cups all-purpose flour, 1/2 tsp salt, the remaining 2 tbsp brown sugar, 1 tbsp cinnamon, and 1 cup raisins to the bowl.
  4. 4Stir until a shaggy dough forms.
  5. 5Transfer the dough onto a floured surface and gently work it with your hands to form a dough ball, adding more flour if too sticky or 1 tbsp warm water if too crumbly.
  6. 6Transfer the dough back to the lightly oiled large mixing bowl.
  7. 7Cover the bowl with plastic wrap and let it sit in a warm area for about 1 hour, or until it doubles in size.
  8. 8Sprinkle flour on the work surface and turn the risen dough out onto it.
  9. 9Divide the dough into 8-9 equal pieces using a dough cutter.
  10. 10Lightly flour the sections and your hands, then fold and pinch each piece into a secure ball.
  11. 11Arrange the shaped dough pieces on a lined baking sheet.
  12. 12Cover them with a kitchen towel or plastic wrap and let them rise for another 30 minutes.
  13. 13Lightly grease a cast iron skillet and place it over medium heat.
  14. 14Dip each side of the dough balls into a bowl of corn meal.
  15. 15Pan-fry the English muffins in the skillet for 1-2 minutes on each side until a golden brown crust forms.
  16. 16Transfer the griddled muffins to an oven and bake at 350°F for 10-15 minutes to ensure they are cooked all the way through.

Tips
