1In a large mixing bowl, combine warm milk, dry active yeast, and granulated sugar (or honey). Stir until combined and let stand 5-10 minutes until foamy.
2Add melted butter, vanilla, and maple syrup to the large bowl containing proofed yeast.
3In a separate large bowl, combine dry ingredients of all-purpose flour, salt, baking powder, cinnamon, and brown sugar. Stir to combine before adding it to your large mixing bowl containing wet ingredients.
4Stir to bring a shaggy dough together.
5Add finely chopped crispy bacon to the dough.
6Continue to bind the bacon bits into the dough gently with your hands, until a dough ball forms.
7Transfer dough ball back into the large mixing bowl that has been lightly drizzled with oil or melted butter.
8Cover with a kitchen towel and place in a warm, dry place to rise for 1 hour, or until doubled in size.
9Divide dough into 6-8 equal pieces.
10Roll the dough pieces into balls.
11Arrange dough pieces on a lined baking sheet and cover with a kitchen towel to let rise another 30 minutes while your oven preheats.
12While waiting for the dough to rise, make the maple icing by adding a little butter to a pan, then real maple syrup, and then powdered sugar.
13Place a lightly greased cast iron skillet over medium-high heat.
14Pan-fry each side of the dough ball for 1-2 minutes until a golden brown crust forms. Reduce heat to medium-low if they are cooking too quickly.
15Bake at 350°F for 10-15 minutes to ensure they are cooked all the way through.
16Dip the griddled English muffins into the maple icing.
17Top with a piece of crispy bacon.

Tips
Don't overwork/knead the dough; we want lots of air bubbles to form.
If bacon isn't your thing, you can leave it out.
If you make really big, fluffy English muffins, finish them off in the oven.
Traditionally, cornmeal is used to griddle English muffins, but it was left out since these will be iced.
Maple bacon donut English muffins make the "meanest" bacon, egg, and cheese sandwich.
You can divide the dough into 6-8 equal pieces to make English muffins of different sizes.
