Directions

  1. 1Boil the lemon scraps in hot water for 15 minutes.
  2. 2Mix the boiled lemon scraps with sugar and olive oil.
  3. 3Optionally, add 2 eggs or 1 egg and 60ml lemon juice at this stage for chewy cookies or a stronger lemon taste.
  4. 4Add flour, baking powder, and a pinch of salt.
  5. 5Form a dough.
  6. 6Form cookies from the dough.
  7. 7Roll everything in icing sugar.
  8. 8Bake in the oven for 15-20 minutes at 180C/360F, or until golden.

  • 200 g sugar
  • 85 g olive oil
  • 280 g all purpose flour
  • 1 tsp baking powder
  • pinch salt
  • icing sugar
  • 2 eggs
  • 60 ml lemon juice

Tips

  • For a shortbread version, just mix boiled lemon with sugar, oil and flour.
  • For chewy lemon cookies, add 2 eggs to the mixture.
  • For a stronger lemon taste, replace one egg with 60ml lemon juice.
