Directions

Combine all dry ingredients using a kitchen aid with a paddle attachment.

Warm the milk slightly and gradually mix it into the dry ingredients until a wet dough forms.

Cover the bowl with cling film and let the dough prove.

Warm the water and mix in the bicarbonate of soda.

Return the dough to the kitchen aid and mix with the paddle for 2 minutes while slowly adding the bicarb mixture.

Continue mixing for another 2 minutes.

Cover the dough and let it prove again until bubbly.

Spray oil on a flat, heavy-based pan and oil metal rings, then heat the pan to medium.

Fill the rings a quarter full with the dough and cook on medium heat until bubbles form and the bottom is golden.

Flip the crumpets and cook the other side, pushing them out of the rings if needed.
