Crumpets

Directions

  1. 1Combine all dry ingredients using a kitchen aid with a paddle attachment.
  2. 2Warm the milk slightly and gradually mix it into the dry ingredients until a wet dough forms.
  3. 3Cover the bowl with cling film and let the dough prove.
  4. 4Warm the water and mix in the bicarbonate of soda.
  5. 5Return the dough to the kitchen aid and mix with the paddle for 2 minutes while slowly adding the bicarb mixture.
  6. 6Continue mixing for another 2 minutes.
  7. 7Cover the dough and let it prove again until bubbly.
  8. 8Spray oil on a flat, heavy-based pan and oil metal rings, then heat the pan to medium.
  9. 9Fill the rings a quarter full with the dough and cook on medium heat until bubbles form and the bottom is golden.
  10. 10Flip the crumpets and cook the other side, pushing them out of the rings if needed.

  • 125 g plain flour
  • 7 g dried yeast
  • 1.5 tsp salt
  • 1 tsp sugar
  • 350 ml whole milk
  • 1 tsp bicarbonate of soda
  • 150 ml water
  • oil (optional)
