Welcome to episode 9 of salads that don't suck, today we are making the best roasted broccoli salad.

To start, slice up your broccoli into smaller pieces.

Don't throw that stem away, trim off the outside and slice it up into strips.

Chuck all the broccoli into a bowl and add in some olive oil, garlic powder, onion powder, salt, and pepper.

Spread the seasoned broccoli onto a tray.

Drain and dry a can of chickpeas.

Add the chickpeas to a bowl and add in some oil, spices, salt, and pepper.

Give the chickpeas a toss and spread them onto another tray.

Pop both trays into the oven for about 25 minutes or until they look roasted.

For our dressing, whisk up some tahini, lemon juice, maple syrup, garlic powder, coriander, salt, pepper, and a dash of water until smooth.

To serve, start with your broccoli.

Then add the crunchy chickpeas.

Add pickled onions.

Add toasted almonds.

Add cilantro.

Now pour on all of that creamy dressing.

This salad is a perfect combo of creamy, crunchy, tangy and salty.
