1Add 2 pounds of ground beef pork blend to a large mixing bowl.
2Combine 2/3 cups of panko breadcrumbs and a half cup of whole milk, then set aside to soak.
3Add two whole eggs, a half cup of Parmesan cheese, a quarter cup of chopped Italian parsley, a tablespoon of dried oregano, two teaspoons of salt, a teaspoon of black pepper, a half of a diced onion, and two to three minced garlic cloves (sautéed) to the meat mixture.
4Add the soaked panko breadcrumbs to the meat mixture.
5Using hand mixers, mix all ingredients together until you have a big ball of meat.
6Place the meat mixture onto a baking sheet and form it into a loaf.
7Optionally, split the meatloaf into two loaves and place slices of old bread under them to absorb grease.
8Bake in the oven at 350° for about 30 minutes.
9After 30 minutes, remove from the oven and cover with your favorite marinara sauce.
10Return to the oven for about 20 minutes or until almost done.
11Remove from the oven and cover with shredded mozzarella cheese.
12Throw them back in the oven until the cheese is melted and the meatloaf is fully cooked.
13Serve over a bed of spaghetti marinara, sprinkled with Parmesan and fresh chopped basil.
