Sausage and Gnocchi Soup

Directions

  1. 1Add one pound of regular Jimmy Dean sausage and one pound of hot Jimmy Dean sausage to a pan.
  2. 2Use a meat chopper to break up the sausage in the pan.
  3. 3Add half of a finely diced yellow onion to the sausage.
  4. 4Use a garlic grinder to grind a shipload of garlic into the pan.
  5. 5Cook the sausage until it is crispy, then drain any grease and return it to the pan.
  6. 6Add 4 cups of chicken broth to the pan.
  7. 7Add 2 cups of heavy whipping cream to the pan.
  8. 8Add half a cup of Parmesan cheese to the pan.
  9. 9Chop about a fourth of a cup of roasted red peppers with kitchen scissors and add them to the pan.
  10. 10Add about 6 ounces of fresh spinach to the pan.
  11. 11Season with onion powder, garlic powder, crushed red pepper, Italian seasoning, salt, and pepper.
  12. 12Once the spinach wilts down, add 1 pound of traditional potato gnocchi to the pan.
  13. 13Break up the gnocchi a little bit if they are stuck together and combine well.
  14. 14Simmer the soup for about 20 minutes.
  15. 15Serve the soup with crispy garlic bread and extra Parmesan cheese on top.

Tips

  • You can use both regular Jimmy Dean sausage if you can't handle the heat, or Italian sausage.
  • If you don't like spinach, you can leave it out.
