Chipotle Chicken Alfredo Pasta

Directions

  1. 1Fill a pot with water and bring to boil on high heat.
  2. 2Trim the fat off 12oz of chicken thighs.
  3. 3Pat the chicken down with a paper towel.
  4. 4Season the chicken thighs with taco seasoning, smoked paprika, garlic powder, and salt.
  5. 5Place the chicken in the air fryer basket.
  6. 6Air fry at 400°F for 15-20 minutes.
  7. 7Add 160g of protein penne pasta to the boiling water.
  8. 8Boil pasta for 10-12 minutes.
  9. 9Add 150g of 2% cottage cheese to the blender.
  10. 10Add 85g fat free evaporated milk to the blender.
  11. 11Add 28g parmesan cheese to the blender.
  12. 12Add 1 chipotle pepper and 1Tbs adobo sauce to the blender.
  13. 13Add 1/2tsp garlic powder, paprika, onion powder, and salt to the blender.
  14. 14Blend all the sauce ingredients together.
  15. 15Slice the cooked chicken into strips.
  16. 16Pour the sauce into a pan.
  17. 17Add the pasta to the sauce.
  18. 18Mix the pasta and sauce together.
  19. 19Serve the pasta in a bowl and top with sliced chicken.

Tips

  • Chicken thighs are WAYYYY tastier than chicken breast.
  • If the chicken doesn't change colors you did not season it enough.
  • Protein pasta has a couple more grams of protein per serving than regular pasta.
