Boil noodles in salted water.

Pull the noodles the minute they start to soften; we want them bouncy, not mushy.

Drain and rinse the noodles to cool.

Mix hoisin, soy sauce, sesame oil, and maple syrup in a small bowl to create the sauce.

Heat oil in a large skillet.

Add the finely chopped garlic and white parts of the scallions to the skillet and cook until fragrant.

Quickly pour in the sauce.

Add the noodles to the skillet, tossing to coat them with the sauce.

Let the noodles cook undisturbed until the bottom turns crispy, for 2 to 3 minutes.

Season to taste with salt and pepper.

Serve topped with toasted sesame seeds and the green parts of the scallions.

2 tsp Maple syrup or honey

6 garlic cloves, finely chopped
6 scallions, white & green parts sliced
4 tbsp toasted sesame seeds
Salt

Tips
Cook noodles until bouncy, not mushy.
Make sure to smell the aromatics as they cook to build flavor.
