Chop off the white parts of the green onion and save the greens for the filling.

Add the white parts of the green onion to 2 quarts of chicken stock.

Add aromatics like ginger and garlic to the stock.

Flavor the broth with pantry staples like soy sauce, brown sugar, and vinegar.

Season with salt and bring it to a simmer.

To the pork, add the reserved green onions, grated ginger, sesame oil, soy sauce, salt, and a little cornstarch.

Mix all the ingredients into the pork.

Roll the pork mixture into small meatballs and drop them into the simmering broth, or use a small scoop or spoon.

Cut the wonton wrappers into triangles.

Add the cut wonton wrappers into the broth.

Add some chopped bok choy into the broth.

Stir the soup.

Serve the soup and top with chili oil.
