Lazy Wonton Soup

Directions

  1. 1Chop off the white parts of the green onion and save the greens for the filling.
  2. 2Add the white parts of the green onion to 2 quarts of chicken stock.
  3. 3Add aromatics like ginger and garlic to the stock.
  4. 4Flavor the broth with pantry staples like soy sauce, brown sugar, and vinegar.
  5. 5Season with salt and bring it to a simmer.
  6. 6To the pork, add the reserved green onions, grated ginger, sesame oil, soy sauce, salt, and a little cornstarch.
  7. 7Mix all the ingredients into the pork.
  8. 8Roll the pork mixture into small meatballs and drop them into the simmering broth, or use a small scoop or spoon.
  9. 9Cut the wonton wrappers into triangles.
  10. 10Add the cut wonton wrappers into the broth.
  11. 11Add some chopped bok choy into the broth.
  12. 12Stir the soup.
  13. 13Serve the soup and top with chili oil.
