1Whisk warm water, yeast, and sugar together and let it sit for 5 minutes.
2Add in the olive oil, salt, garlic powder, oregano, and half of the bread flour; slowly mix together then add the remaining flour until a shaggy dough forms.
3On a floured surface, knead dough for 5 minutes.
4Cover and let the dough rise in a warm place until doubled in size.
5Cut the dough into 8 equal pieces and roll each into a log; flatten logs into 1-inch wide rectangles, line with shredded mozzarella, seal lengthwise, and double-knot, tucking ends underneath.
6Mix together the garlic butter topping ingredients.
7Place knots 2 inches apart on a baking sheet, cover, and let rise in a warm place for 30 minutes.
8Brush knots with the beaten egg and some garlic butter topping.
9Bake at 400 F for 20 minutes.
10Brush the baked knots with the remaining garlic butter topping.
