Apple pie blondies

Directions

  1. 1Peel and dice two Granny Smith apples.
  2. 2Coat the diced apples with 20g of granulated sugar and 1 tsp of cinnamon.
  3. 3Mix the apples until combined and set aside.
  4. 4Whisk together 170g of softened salted butter, 165g of light brown sugar, and 100g of granulated sugar until light and fluffy.
  5. 5Add one large egg, one egg yolk, and 2 tsp of vanilla extract to the mixture.
  6. 6Whisk again until the mixture is light in color.
  7. 7Fold in 215g of plain flour until just combined.
  8. 8Add the cinnamon apple mix to the batter.
  9. 9Fold the apple mix through the batter.
  10. 10Scoop the batter into an 8x8 inch lined baking tin.
  11. 11Smooth out the batter to the edges of the tin.
  12. 12Mix together 30g of granulated sugar and 1 tsp of cinnamon for the topping.
  13. 13Sprinkle the sugar and cinnamon mixture all over the top of the batter.
  14. 14Bake in the oven at 180C (160C fan) for 30-40 minutes.
  15. 15Allow to cool, then refrigerate for 2 hours for best results.

Tips
