Preheat oven to 400°F. In a food processor, add 1/2 cup rolled oats and grind until a fine consistency.

Add in 3/4 cup flour, 1/4 tsp salt, 1/4 tsp baking soda, 1/4 cup butter, 2 tsp honey, & 1/4 cup buttermilk. Pulse until dough is formed.

Using a rolling pin, roll out dough to ⅛ inch thick.

Using animal shaped cookie cutters, cut out cookies.

Place on a parchment lined pan. Bake 5–7 mins until the edges are browned lightly.

Preheat the oven to 350°F and grease a mini muffin tin.

In a medium bowl, whisk together 2 cups flour, 2 tsp baking powder, 1/4 tsp salt.

In a separate bowl, whisk together 2 eggs, 1 tbsp vanilla, 1/2 cup Greek yogurt, 2 tbsp honey, 3/4 cup milk.

Combine wet ingredients with dry ingredients.

Gently fold in ¼ cup of mini chocolate chips.

Pour batter into prepared tin. Bake at 350°F for 11-14 minutes.

Cool in the muffin tin for 5 minutes before transferring to a wire rack.

Preheat oven to 350℉.

In a large bowl, combine 3 cups oats, 3/4 cup natural peanut butter, 1/3 cup maple syrup, 1/2 tsp vanilla, 1/2 cup chocolate chips and mix well.

Line a 9×9 baking dish or pan with parchment paper.

Transfer the mixture to the prepared dish or pan.

Firmly press the mixture into the pan in an even layer.

Bake for 15-17 minutes or until the center is baked through and the edges are just starting to brown.

Remove from the oven and place pan on a cooling rack.

Let the bars cool completely before cutting!
