Mix mayo, sriracha and smoked paprika together in a small bowl and set aside.

Thoroughly whisk together eggs, Franks hot sauce, and a pinch of salt in another bowl. Set aside.

Fry up your bacon until crispy, then remove from the pan and set on a paper towel to absorb some of the grease.

Wipe out the pan and melt 1 tbsp of butter over medium-low heat, then pour in the eggs.

Slowly stir the eggs until curds begin to form.

Add two pieces of cheese and the scallions and keep stirring until the eggs are slightly set and firm yet wet, glossy, and fluffy looking.

Separate the cooked eggs into two piles and top each one with a slice of American cheese.

Wipe out the pan again and add the remaining butter.

Toast the insides of the brioche buns until they’re golden brown.

Smear 1 tbsp of mayo onto each of the bottom of the buns.

Top evenly with half of the cheesy scrambled eggs and half of the bacon.

Smear more mayo onto the top half of the bun and then close the sandwich up.

Repeat for the second sandwich.

Ingredients
0.5 cup mayo
2 tsp sriracha
1 tsp smoked paprika, optional
2 tbsp salted butter, divided
5 large eggs
1 tsp Franks hot sauce
1 tbsp scallions, finely diced
4 slices cheddar cheese (I actually prefer american cheese which is pictured!)
4 pieces bacon, cooked
2 brioche buns
kosher salt

Tips
If you don't have smoked paprika, you can skip it, but it adds a smoky depth.
Variations include using sausage, ham, or tomato instead of bacon.
Other cheese options are goat cheese, gouda, or spicy pepperjack.
Brioche buns can be swapped for toasted white bread, a croissant, or a toasted bagel.
Serve with a mimosa or hot sauce michelada for hangovers, or kale juice for a healthier option.
For a big breakfast or brunch spread, consider easy puff pastry cinnamon buns or salted caramel churro french toast.
