Knockoff EggSlut Sandwich

Directions

  1. 1Mix mayo, sriracha and smoked paprika together in a small bowl and set aside.
  2. 2Thoroughly whisk together eggs, Franks hot sauce, and a pinch of salt in another bowl. Set aside.
  3. 3Fry up your bacon until crispy, then remove from the pan and set on a paper towel to absorb some of the grease.
  4. 4Wipe out the pan and melt 1 tbsp of butter over medium-low heat, then pour in the eggs.
  5. 5Slowly stir the eggs until curds begin to form.
  6. 6Add two pieces of cheese and the scallions and keep stirring until the eggs are slightly set and firm yet wet, glossy, and fluffy looking.
  7. 7Separate the cooked eggs into two piles and top each one with a slice of American cheese.
  8. 8Wipe out the pan again and add the remaining butter.
  9. 9Toast the insides of the brioche buns until they’re golden brown.
  10. 10Smear 1 tbsp of mayo onto each of the bottom of the buns.
  11. 11Top evenly with half of the cheesy scrambled eggs and half of the bacon.
  12. 12Smear more mayo onto the top half of the bun and then close the sandwich up.
  13. 13Repeat for the second sandwich.
  14. 14Serve immediately and enjoy!

  • 0.5 cup mayo
  • 2 tsp sriracha

  • 4 pieces bacon, cooked

  • If you don't have smoked paprika, you can skip it, but it adds a smoky depth.
