Krispy Kreme Donuts

Directions

  1. 1Add 1 and 1/4 cups of warm milk to a mixing bowl.
  2. 2Add 2 and 1/4 teaspoons of active yeast to the bowl.
  3. 3Add 1/4 cup of regular sugar to the bowl.
  4. 4Once the mixture is nice and foamy, add in one stick (8 tablespoons) of melted and cooled butter.
  5. 5Add two eggs to the mixture.
  6. 6Whisk the mixture very well to break up the egg yolks.
  7. 7Add one teaspoon of salt to the mixture.
  8. 8Add a splash of vanilla to the mixture.
  9. 9Add four and 1/4 cups of bread flour (535 grams), half at a time.
  10. 10Set the bowl onto a stand mixer with a dough hook attachment and mix slowly until all is incorporated.
  11. 11Scrape down the sides of the bowl and add the other half of the flour.
  12. 12Mix until the dough forms and pulls away from the sides of the bowl.
  13. 13Add the dough into an oiled bowl and flip it so it's oiled on top as well.
  14. 14Cover the bowl with plastic wrap and let it rise on the counter for 1 to 2 hours.
  15. 15Lightly sprinkle your surface with some flour.
  16. 16Place the risen dough on the floured surface.
  17. 17Pull and stretch the dough out to about a half inch thick.
  18. 18Take a circle cookie cutter and press straight down to cut out the donuts, avoiding twisting.
  19. 19Take a piping tip and cut the middle out of the donut.
  20. 20Let the cut donuts sit and proof (rise) a little more before frying.
  21. 21Set the edge of the donut into the hot oil and gently drop it in.
  22. 22After about 20 seconds, flip the donuts.
  23. 23Once golden brown, remove the donuts and place them onto a plate with a paper towel to absorb excess oil.
  24. 24For the glaze, sift powdered sugar into a bowl.
  25. 25Add a tiny splash of milk and some salt to the powdered sugar.
  26. 26Whisk the glaze together until it's nice and smooth, achieving a consistency that drips off the whisk in a continuous string.
  27. 27Drop the donut straight down into the glaze.
  28. 28Flip the donut over and place it on a cooling rack over a tray.
  29. 29For chocolate donuts, heat jarred chocolate frosting in the microwave for literally 10 seconds to make it runny.
  30. 30Dip the donut straight down into the melted chocolate frosting.
  31. 31Flip the donut over to coat both sides.

Tips

  • For extra fluffy donuts, pull and stretch the dough instead of using a rolling pin.
  • When cutting the donut shapes, press straight down with the cutter and do not twist.
  • When placing donuts in oil, gently set the edge in and then drop them to prevent splashing.
  • Flip donuts after about 20 seconds of frying on each side.
  • The glaze should have a consistency that drips off the whisk in a continuous string.
  • Dip donuts straight down into the glaze or chocolate frosting and then flip them over.
  • For chocolate frosting, heat it up in the microwave for literally 10 seconds to make it runny enough to dip the donuts in.
