Banana Bread

Directions

  1. 1Mash bananas in one bowl.
  2. 2Add coconut milk to the bananas.
  3. 3Mix the flour, baking powder, and baking soda in another bowl.
  4. 4Cream the butter and sugar together using a spatula in a third bowl.
  5. 5Switch to a whisk, and add the egg and vanilla.
  6. 6Whisk until smooth.
  7. 7Alternately add the wet and dry ingredients, 1/3rd at a time, whisking after each addition.
  8. 8Coat the chocolate chips and walnuts in a tsp of flour, then add them to the batter and gently fold them in.
  9. 9Pour the batter into a lightly greased bundt pan, and top with more chocolate chips and walnuts if preferred.
  10. 10Bake at 350 for about 40 mins or until a toothpick comes out clean, alternatively you could also bake in a loaf pan for about an hour.
  11. 11Let it cool for 20 minutes before flipping the banana bread out of the pan or it might deflate/collapse. I also like to go around the edges with a knife in case any of the chocolate chips stuck to the edges.

  • 0.5 cup chocolate chips
  • 0.66 cup chocolate chips
  • 0.5 cup chopped walnuts
  • 0.66 cup chopped walnuts
  • 1 tsp flour

Tips

  • Use coconut milk, it is magical.
  • If the batter might look like it's curdled and it's not coming together but I promise you it will, just keep on whisking and it'll come together by the end.
  • coat the chocolate chips and walnuts in a tsp of flour, then add them to the batter and gently fold them in. Don’t over mix.
  • Let it cool for 20 minutes before flipping the banana bread out of the pan or it might deflate/collapse.
