Fudgy Black Bean Brownies

Directions

  1. 1Blend drained and rinsed black beans until smooth in a food processor or blender.
  2. 2Add 3 tablespoons of canola oil or applesauce (or a combination) to the blender.
  3. 3Add 3 eggs to the blender.
  4. 4Combine all ingredients in the blender.
  5. 5Transfer the black bean mixture to a mixing bowl (if using a blender).
  6. 6Add half a cup of unsweetened cocoa powder to the mixture.
  7. 7Add three-quarter cup of sugar to the mixture.
  8. 8Add half a teaspoon of baking powder to the mixture.
  9. 9Add a dash of salt to the mixture.
  10. 10Add a teaspoon of vanilla extract to the mixture.
  11. 11Finish mixing the batter.
  12. 12Mix 1/4 cup of chocolate chips or smashed holiday M&Ms into the batter.
  13. 13Pour the batter into a sprayed 8x8 baking pan.
  14. 14Sprinkle the top with 1/4 cup of chocolate chips. You can also add nuts if you'd like.
  15. 15Bake at 350 degrees for 30 to 35 minutes.
  16. 16Check for doneness with a clean toothpick; the edges should start to pull away from the sides.
  17. 17Cut into squares and enjoy.

Tips

  • If using a food processor, blend beans first. If using a blender, put all liquid ingredients in first and combine.
  • If using a blender, take the mixture out before adding dry ingredients.
