Homemade Vanilla Pudding

Directions

  1. 1Bring milk to a boil. (If making a double batch, use 1.5 quarts of milk and reserve some for paste.)
  2. 2Separate egg yolks from whites. (You don't need to keep the whites.)
  3. 3Whisk the egg yolks a little bit.
  4. 4Add raw sugar to the egg yolks.
  5. 5Whisk the sugar and egg yolks.
  6. 6Add flour to the mixture.
  7. 7Add salt to the mixture.
  8. 8Gradually add a little bit of milk and start whisking. (It might get pretty stiff, but that's what you want to prevent lumps.)
  9. 9Once the milk comes to a boil, quickly whisk in the paste mixture.
  10. 10Keep whisking it over heat until it comes to a boil and turns nice and thick.
  11. 11Once the pudding turns thick, turn off the heat.
  12. 12Add vanilla and whisk it in.
  13. 13Pour the pudding into a bowl to cool.
  14. 14Taste the pudding to ensure it's delicious.
