Directions

  1. 1Cut the white sharp Cheddar cheese into cubes.
  2. 2Chop the Granny Smith apple into pieces.
  3. 3Finely chop the shallot.
  4. 4Grate the garlic clove into a bowl.
  5. 5Add extra virgin olive oil, apple cider vinegar, honey, whole-grain mustard, freshly ground black pepper, and kosher salt to the bowl with the shallot and grated garlic.
  6. 6Whisk together the ingredients for the dressing until well combined.
  7. 7In a large bowl, add the chopped Granny Smith apple, chopped Honeycrisp apple, cubed white sharp Cheddar cheese, salami cut into half moons, cornichons, dried cranberries, and walnut halves.
  8. 8Drizzle the prepared dressing over the mixture in the large bowl.
  9. 9Mix everything together until well coated.
  10. 10Transfer the mixture to a large jar with a lid.
  11. 11Close the jar with the lid.
  12. 12Shake the jar to further mix the contents.

  • 1 cup cornichons
  • 2 tablespoons finely chopped shallot
  • 0.33 cup dried cranberries
  • 0.33 cup walnut halves
