Press the tofu to get rid of as much water as possible.

Cut the tofu into cubes.

Season the tofu with salt and black pepper on both sides.

Coat the tofu in tapioca starch or corn starch, tapping off any excess.

Deep fry the tofu.

Separate any tofu pieces that stick together.

Remove the tofu when the outer shell is hard and crispy.

Double fry the tofu for extra crispiness (optional).

To make the dipping sauce, combine minced garlic, soy sauce, gochugaru, agave, and plum vinegar.

Add scallion and toasted sesame seeds to the sauce.

Taste the sauce.

1 block medium firm tofu
Salt
Black pepper
Tapioca starch or corn starch
Minced garlic
Soy sauce
Chili powder (gochugaru)
Agave
Plum vinegar
Chopped scallion
Toasted sesame seeds
Tips
When frying, if something floats to the top, it's done.
Double frying is optional for extra crispy tofu.
