Cajun Garlic Herb Butter Lamb & Veg Boats

Directions

  1. 1Fold the parchment paper into a boat shape, creasing and tying the ends with string.
  2. 2In a bowl, combine Cajun seasoning mix, paprika, and dried parsley.
  3. 3Place the lamb pieces in a bowl.
  4. 4Add Walkerswood Green Seasoning, the prepared Cajun seasoning mix, and fresh thyme to the lamb.
  5. 5Mix the lamb until thoroughly coated with the seasoning.
  6. 6In a pan, melt butter and add minced garlic and chopped red chilies.
  7. 7Add Cajun seasoning to the butter mixture.
  8. 8Add a block of butter to the mixture.
  9. 9Pour in water and squeeze in lemon juice.
  10. 10Add fresh parsley to the sauce and stir.
  11. 11In a large bowl, combine cut potatoes, corn on the cob, red and green bell peppers, red onion, and carrots.
  12. 12Drizzle olive oil over the vegetables.
  13. 13Season the vegetables with Cajun seasoning and toss to coat evenly.
  14. 14Add the marinated lamb to the seasoned vegetables and mix well.
  15. 15Transfer the lamb and vegetable mixture into the prepared parchment paper boat.
  16. 16Fold the parchment paper securely around the ingredients to form a sealed packet.
  17. 17Pour the prepared Cajun garlic herb butter sauce over the lamb and vegetables in the boat.
  18. 18Bake the boat until the lamb is tender and the vegetables are cooked through.
