Directions
- 1In a bowl add butter, granulated sugar and brown sugar.
- 2Mix well to combine for 1-2 min.
- 3Crack in the egg and add the egg yolk.
- 4Whisk for 2-3 min until smooth paste forms.
- 5Add in the vanilla bean paste and mix to combine.
- 6In a separate bowl add all purpose flour, cornstarch, baking soda, salt.
- 7Mix to combine.
- 8Gradually add the dry ingredients to the wet batter and mix until just combined.
- 9Then, add the sprinkles and mix until they’re evenly distributed.
- 10Scoop 12 cookies onto a piece of parchment paper and roll them in granulated sugar.
- 11Freeze them for 30 minutes.
- 12Preheat the oven to 350°F.
- 13Place 4 cookies onto one baking sheet, spacing them evenly.
- 14Bake for 13-14 minutes.
- 15Let them cool completely before serving and enjoy.

- 0.33 tsp salt
- 0.5 tsp baking soda
- 2 tsp vanilla bean paste or vanilla extract
- 0.25 cup light brown sugar
- 0.75 cup granulated sugar
- 1 egg
- 1 egg yolk
- 0.25 cup sprinkles
- 0.75 cup unsalted butter, melted
- 4 tbsp granulated sugar, for rolling
