Crispy Cheesy Beef Tacos

Directions

  1. 1In a bowl, add yogurt and light mayo, chili lime hot sauce, honey, these seasonings (smoked paprika, onion powder), and fresh parsley. Mix till smooth and creamy and set aside in the fridge.
  2. 2Line a large sheet pan, add chopped bell peppers and onion, spray with avocado cooking spray, and season with taco seasoning (salt, paprika, oregano, garlic powder, onion powder, cumin). Mix well, spread evenly, then oven roast for 15 minutes at 180C / 370F.
  3. 3Spread the lean ground beef over the veggies with more taco seasoning (salt, smoked paprika, oregano, garlic powder, onion powder, cumin), tomato paste, and fresh coriander. Mix till well combined with your hands, flatten evenly, then use a spatula to score lightly. Spray the tray again.
  4. 4Oven bake at 180C / 370F for just 6 minutes to partially cook the beef. This allows you to easily break it up without overcooking.
  5. 5Break up the beef, then return to the oven for another 6 minutes until lightly crisp.
  6. 6Add a splash of water, then mix until juicy and delicious. Then remove the beef from the tray.
  7. 7Dip the low carb mini wraps in all the juices from the pan. Lay them out, fill generously with mozzarella and the juicy beef.
  8. 8Fold the tacos tightly, then oven bake for 12 minutes, flipping halfway until golden and crispy.
  9. 9Finally, serve with the honey chili lime sauce.
