Directions

Add 500g of minced beef and pork (50/50) to a bowl.

Add 1 grated medium brown onion to the bowl.

Add 1 peeled and grated medium carrot to the bowl.

Add 2 egg yolks to the bowl.

Add 1 finely grated clove of garlic to the bowl.

Add 1 tbsp of fresh thyme leaves (dried also fine) to the bowl.

Add 1 tsp of black pepper to the bowl.

Add 1 tsp of white pepper to the bowl.

Add 0.5 tsp of salt to the bowl.

Add 2 tbsp of fine oatmeal to the bowl.

Add a good dash of Worcestershire sauce and 2 tbsp of RH brown sauce (or your favorite relish) to the bowl.

Mix all ingredients well together by hand.

Put the well-mixed filling into a piping bag.

Dust the surface with flour to prevent sticking.

Pipe a thick sausage shape onto the length of the prepared puff pastry.

Mix the leftover egg whites with a little milk.

Brush the edges of the pastry with the egg white mixture before rolling it into shape.

Cut the rolled pastry into individual sausage rolls using scissors; cutting with scissors is easier than using a knife.

Place the cut sausage rolls on a baking tray.

Make three small cuts in the top of each sausage roll.

Brush the tops of the sausage rolls with the egg white and milk mixture.

Sprinkle some nigella seeds on top of each sausage roll.

Bake in a preheated oven at 180°C fan forced for 30-40 minutes until golden brown.

Leave to cool on a wire rack a little before serving.

Serve the sausage rolls on their own with sauce or as a main meal with some sides.

Tips
Adding oatmeal helps absorb the fat and retain flavor once cooked.
Use a 50/50 mix of beef and pork for added flavor.
Cutting the sausage rolls with scissors is easier than using a knife.
Feel free to add more grated vegetables if cooking for kids, they won’t even know they are there.
