Pastelón de Amarillos

Directions

  1. 1Add oil to a caldero, then add chopped onion, chopped green pepper, and sofrito criollo.
  2. 2Slice plantains, remove the peel, and cut them lengthwise in half, and pan fry them in oil.
  3. 3Add olives and ground beef to the caldero, then season with criollo adobo and stir with a potato masher until the ground beef is separated.
  4. 4Add the tomato sauce and chopped cilantro and cook for 5 minutes more.
  5. 5Add marinara sauce to the bottom of a glass baking dish.
  6. 6Layer the plantains over the sauce, then dollop cream cheese evenly on top and add some beaten egg.
  7. 7Add a layer of ground beef, then repeat the layers of plantains, egg, cream cheese and ground beef.
  8. 8Top it with mozzarella cheese, and bake at 400 degrees for 10 minutes.

Tips

  • The more ripe the plantains, the sweeter they will be.
  • Using a potato masher is a good technique to keep the ground beef separated while cooking.
  • Marinara sauce helps the pastelón unmold easier.
