Cosmic Brownies

Directions

  1. 1Melt the butter.
  2. 2Add the caster sugar and light brown sugar to the melted butter.
  3. 3Whisk until fully combined.
  4. 4Add two large eggs to the mixture.
  5. 5Whisk the mixture until it becomes light and fluffy.
  6. 6Pour melted dark chocolate into the mixture and whisk until combined.
  7. 7Sift plain flour, cocoa powder, and salt into the chocolate mixture.
  8. 8Fold the dry ingredients into the mixture until just combined.
  9. 9Scoop the brownie batter into an 8x8 inch tin lined with baking paper.
  10. 10Smooth out the batter evenly in the tin.
  11. 11Bake in the oven at 190°C (170°C fan) for 20-25 minutes.
  12. 12Let the brownie cool completely.
  13. 13For the topping, put dark chocolate in a measuring cup.
  14. 14Pour double cream over the dark chocolate.
  15. 15Microwave in 30-second bursts (600W) until melted.
  16. 16Stir the chocolate and cream mixture gently until smooth.
  17. 17Pour the smooth chocolate topping over the cooled brownie.
  18. 18Smooth out the topping evenly.
  19. 19Top with sprinkles or mini chocolate Smarties.
  20. 20Refrigerate for a minimum of 1-2 hours until set.
  21. 21Slice the brownie into 16 pieces.

  • 125 g dark chocolate, melted & cooled slightly
  • 100 g plain flour
  • 30 g cocoa powder
  • 1 tsp salt
  • 150 g dark chocolate
  • 100 ml double/heavy cream
  • sprinkles or chocolate candies

Tips

  • Bake until the edges are cracked and the middle no longer wobbles.
  • Allow to cool fully before adding the topping.
  • These brownies are super rich and fudgy and are a great substitute for Cosmic Brownies if they are not available in your area.
  • You can use either sprinkles or mini chocolate smartie things to top the brownies
