Hawaiian Pineapple Cake

Directions

  1. 1Chop walnuts in a food processor and set aside.
  2. 2Drain pineapple tidbits, setting aside the juice and tidbits separately.
  3. 3Crush one can of drained pineapple tidbits in a food processor to create crushed pineapple and set aside.
  4. 4Combine all-purpose flour, baking soda, and baking powder in a bowl, whisk and set aside.
  5. 5Cream together softened butter, granulated sugar, and brown sugar with a mixer.
  6. 6Add 3 eggs and 2 teaspoons of vanilla extract to the creamed mixture and mix well.
  7. 7Add the dry ingredients to the moist ingredients and mix on low speed until half incorporated.
  8. 8Add the crushed pineapple and 3/4 cup of pineapple juice, then fold everything together nicely with a spatula.
  9. 9Fold in 1 cup of shredded coconut and 1 cup of chopped walnuts into the cake batter.
  10. 10Pour the cake batter into a 9x13 prepared baking dish.
  11. 11Sprinkle the top of the cake with shredded coconut for toasting.
  12. 12Bake the cake in the oven at 350 degrees Fahrenheit for 45 minutes.
  13. 13Remove the hot cake from the oven and evenly distribute the remaining pineapple tidbits over the top without disturbing the toasted coconut.
  14. 14Allow the cake to fully cool before icing.
  15. 15Cream 3/4 cup of butter well, then add one block of cream cheese and mix until smooth.
  16. 16Add 2 cups of icing sugar to the butter and cream cheese mixture, gently incorporate with a fork first, then mix with an electric mixer.
  17. 17Add vanilla extract to the icing mixture and mix well.
  18. 18Taste the icing and add more powdered sugar if desired.
  19. 19Ice the cooled cake with the cream cheese frosting.
  20. 20Garnish the cake with the leftover crushed walnuts from earlier.

Tips

  • Do your prep work first to make the baking process less overwhelming.
