Directions
- 1Combine wet ingredients: 3/4 cup unsalted butter, 3/4 cup light brown sugar, 1/4 cup sugar, 2 eggs, 1/2 tbsp vanilla.
- 2Combine dry ingredients: 2 1/4 cups AP flour, 3.4 oz banana cream pudding mix, 1/2 tsp baking soda, 1/2 tsp cornstarch, 1/2 tsp salt, and 1 1/2 cups white chocolate.
- 3Mix wet and dry ingredients.
- 4Roll into balls and bake at 350 for 7 minutes.
- 5Make banana buttercream: 1 cup unsalted butter, 3 cups powdered sugar, 1/4 tsp salt, 1 tsp banana emulsion, 2-3 tbsp heavy cream, yellow food coloring.
- 6Crush Nilla wafers.
- 7Assemble: place cookies, buttercream, and crushed Nilla wafers in containers.
