Apple Cinnamon Streusel Muffins

Directions

  1. 1Peel, core and chop 2 apples, making 1.5 cups. Set aside.
  2. 2Pre-heat oven to 170 degrees Celsius convection or 190 degrees Celsius conventional setting.
  3. 3In a bowl sift plain flour, baking powder, baking soda and salt.
  4. 4Add in caster sugar, brown sugar and cinnamon. Whisk together, then set aside.
  5. 5In another bowl, whisk together buttermilk, vegetable oil, lightly whisked eggs and vanilla extract.
  6. 6Bring in flour mixture, then pour in buttermilk mixture. Whisk until half combined.
  7. 7Fold in chopped apples. Fold until just combined.
  8. 8Fill muffin liners a bit more than half way.
  9. 9Prepare streusel by whisking together plain flour, caster sugar, brown sugar, salt and cinnamon.
  10. 10Gradually pour melted butter into the streusel dry ingredients.
  11. 11With a fork, mix butter with the dry ingredients until it creates streusel.
  12. 12Top muffins with a tablespoon of streusel each.
  13. 13Bake for 25 minutes at 170 degrees Celsius convection or 190 degrees Celsius conventional oven.
  14. 14Allow muffins to cool before serving.
