1Whisk up your dry ingredients and set them aside.
2Cream your butter and sugars until light and fluffy.
3Next, incorporate your room temperature eggs, vanilla, and molasses. Do not use black strap molasses, use classic molasses.
4Mix until fully incorporated, then fold in all of your dry ingredients using a spatula.
5Halfway through, fold in your mix-ins. It is easier to fold them in if the dough is not completely together yet.
6Once you have the beautiful oatmeal M&M chocolate chip cookie dough, scoop out approximately 28 2oz cookie dough balls.
7Chill your dough balls in the fridge for at least 30 minutes, then bake on 350 for 9 to 11 minutes.
8While those cookies cool, whip up your marshmallow buttercream by whipping your softened butter and marshmallow fluff for a few minutes.
9Then incorporate part of your powdered sugar and vanilla and whip again.
10Then add the rest of your powdered sugar, whip again on high for a few more minutes and you're done.
11Pipe the icing onto one cookie and top it with another cookie to create the cream pies.

Tips
You can make classic oatmeal cream pies or oatmeal raisin cream pies using this recipe, or just use the cookie recipe and make amazing oatmeal cookies.
If you don't have a hand mixer, you can mix by hand.
Do not start piping the icing until the cookies are fully cooled.
You can also spoon the icing inside the cookies, you do not need a piping bag.
