Big Mama's Cinnamon Poke Cake

Directions

  1. 1Preheat oven to 350 degrees.
  2. 2In a stand mixer or handheld mixer, cream together 1 1/2 cups of granulated sugar and 1/2 cup of Crisco.
  3. 3Add in 4 eggs and mix.
  4. 4Add 2 cups of self rising flour and 1 cup of milk, and 2 teaspoons of vanilla extract. Mix.
  5. 5Pour 1/2 of the batter into a greased 9x13 cake pan.
  6. 6In a separate bowl, mix 1/2 cup of brown sugar and 4 teaspoons of cinnamon.
  7. 7Sprinkle the cinnamon-sugar mixture over the batter in the cake pan.
  8. 8Pour the remaining batter over the cinnamon-sugar layer.
  9. 9Swirl the batter with a knife to combine the layers.
  10. 10Bake for 30-45 minutes.
  11. 11While the cake is baking, make the icing by combining 3 tablespoons of butter, 1/4 cup of milk, 1 teaspoon of vanilla extract, and 2 cups of powdered sugar in a saucepan and heating until melted and smooth.
  12. 12Once the cake is baked, let it cool slightly. Then, poke holes in the cake using a fork.
  13. 13Pour the icing over the poked cake.
