2Toss seasoned flour on plenty of chicken tenders and let them soak up the flour and essentially dry out.
3In a large bowl, mix lots of flour, corn starch and a dash of baking powder.
4In a separate bowl, mix lots of chili and onion powder, plenty of smoked paprika and cayenne pepper, lots of garlic powder, black pepper and brown sugar to create homemade Nashville hot seasoning.
5Add the Nashville hot seasoning to the flour mixture.
6In a separate bowl, add some of the flour mixture, two eggs, and sparkling water to create a batter.
7Dip the dried-out tenders into the wet batter, then into the dry flour mixture, then back into the wet batter, and finally back into the dry flour mixture.
8Set your oil at 350 and drop them into the bubble bath.
9Once the chicken is fried, take some of the frying oil and dump it over the Nashville hot mix that was made earlier.
10Quickly plunge the fried chicken into the hot oil.
