Directions
- 1Bash the chicken breasts until they are roughly 2-3cm thick.
- 2Season your chicken breast with extra virgin olive oil, crushed garlic, salt, freshly ground black pepper, smoked paprika, and garlic granules.
- 3Melt some butter in a pan.
- 4Add some fresh thyme to the pan.
- 5Sear your chicken breasts in the pan until they are browned.
- 6Sauté a finely chopped shallot in the same pan to pick up all the flavor from the chicken breast.
- 7Add the orzo to the pan.
- 8Add chicken or vegetable stock to the orzo in the pan.
- 9Add lemon zest to the pan.
- 10Add light cream cheese to the pan.
- 11Add fresh parsley to the pan.
- 12Add a little bit of butter to the pan.
- 13Add lemon juice to the pan.
- 14Cook the orzo risotto-style until it is creamy.
- 15Serve the creamy orzo.
- 16Place the pan-fried garlic chicken breast on top of the orzo.
- 17Garnish with a slice of lemon and squeeze some fresh lemon juice over the chicken.
