Directions

  1. 1Get a big pan over medium heat and add ground beef, diced onion, and seasonings.
  2. 2Cook the beef, then add busy people garlic and rice.
  3. 3Add corn, black beans, Rotel, tomato sauce, and chicken broth.
  4. 4Stir, bring to a simmer, and cook covered for 15-20 minutes.
  5. 5Stir in some cheese and top with a little bit more. Place in the oven for a few minutes to melt the cheese.
  6. 6Sprinkle with Mexican confetti.
