Crispy Chicken with Lime Butter

Directions

  1. 1Pat chicken dry, season with salt and pepper, and let sit 10–30 minutes.
  2. 2Heat a large skillet over medium with oil.
  3. 3Add chicken skin-side down, and cook undisturbed until skin is deeply golden and crisp, 20–25 minutes (adjust heat as needed).
  4. 4Add garlic, flip chicken, and cook until cooked through, about 5 minutes.
  5. 5Transfer chicken to a plate and remove all but 3 Tbsp fat from the pan.
  6. 6Add stock, lime juice, and maple syrup to the pan, season, bring to a simmer, and reduce by half, about 3 minutes.
  7. 7Whisk in butter until the sauce is glossy and thick.
  8. 8Serve chicken with sauce, lime wedges, and herbs.

  • 0.5 cup chicken stock
  • 2 Tbsp lime juice
  • lime wedges
  • 2 tsp maple syrup
  • 3 Tbsp cold unsalted butter
  • Fresh herbs
