Directions

  1. 1In a bowl, toss diced apples with brown sugar and cinnamon. Set aside so the flavors soften and mingle.
  2. 2Beat butter and sugar until pale and fluffy.
  3. 3Add eggs one at a time, then vanilla, mixing gently until smooth.
  4. 4Whisk flour and baking powder together.
  5. 5Add to the batter alternately with milk, stirring just until combined. The batter should be thick and soft.
  6. 6Pour half the batter into a greased loaf pan.
  7. 7Spoon half the apple mixture over the top.
  8. 8Add remaining batter, then finish with the rest of the apples.
  9. 9Use a knife to gently swirl through the layers, creating soft ribbons without overmixing.
  10. 10Bake at 350°F (175°C) for 50–60 minutes, until a toothpick comes out mostly clean and the top is golden and fragrant.
  11. 11Let the loaf cool slightly.
  12. 12Whisk glaze ingredients and drizzle slowly over the warm bread so it settles into the crumb.
