Tortellini in Schinken-Sahne-Soße

Directions

  1. 1Melt butter in a pan over medium heat.
  2. 2Dice the prosciutto into small pieces, add to the butter, and let it brown slightly.
  3. 3Finely chop the shallot and add to the pan.
  4. 4Crush and finely chop the garlic clove and add it to the pan. Cook until light brown.
  5. 5Add white wine to the pan and let it reduce completely.
  6. 6Meanwhile, bring a large pot of salted water to a boil and cook the tortellini.
  7. 7Mix cream, parmesan, and egg yolk in a bowl. Season with salt, pepper, and nutmeg.
  8. 8Once the wine is reduced, add the cream mixture to the pan, then toss in the cooked tortellini.

Ingredients

  • 1 tbsp butter
  • 150 g prosciutto
  • 1 whole shallot
  • 1 whole garlic clove
  • 50 ml white wine
  • 1 cup cream
  • 1 handful parmesan
  • 1 whole egg yolk
  • to taste tortellini
  • salt (optional)
  • pepper (optional)
  • nutmeg (optional)

Tips

  • You can use various types of ham instead of prosciutto, such as boiled ham or diced ham cubes.
  • Ensure the wine is almost completely cooked off before adding the cream mixture so the cream does not curdle.
